Yummy Vegan Chili
1 1/2-2 teaspoons olive oil 
1/4 medium onion, chopped
1/2 teaspoon ground cumin
1 tablespoon dried oregano
Salt, to taste
1 green bell pepper, chopped
1 4 oz can chopped green chilies
1 package vegan ground beef (I used Lightlife Smart Ground)
8 oz tomato sauce
2-3 tablespoons chili powder
Pepper, to taste
1/2 (15 oz) can garbanzo beans, drained
1/2 (15 oz) can kidney beans, drained
1/2 (15 oz) can black beans
5 oz whole kernel corn
In a large saucepan, sauté onion, bell pepper, cumin, and oregano using the olive oil. In a separate saucepan, prepare the ground beef and set aside.Add the green chilies, chili powder, tomato sauce, salt, and pepper into the large saucepan, let it simmer for about 5 minutes before adding the beans and corn.Mix in the beef and let it all simmer for another 5 minutes before serving. Enjoy!

Feelin a bit under the weather….so dinner last night was homemade (vegan) “chicken” noodle soup.  I chopped up some Gardein Chick’n Scallopini filets, added veggies, noodles, Better Than Bullion no chicken broth, some fresh dill and herbs de provence. Really hit the spot.
